Tomato, Cucumber and Avocado Salad

Ingredients
- 1 1/2 cup grape tomatoes, sliced
- 1 whole cucumber, peeled and diced
- 1/2 cup onion, finely chopped
- 1 avocado
- 4 cups romaine lettuce
- 2 cups celery, chopped
- 1Tbsp. parsley, finely chopped
- 2 Tbsp. extra virgin olive oil
- Sea salt and black pepper to taste
Directions
- Clean and cut all vegetables then place in a medium-sized bowl.
- Sprinkle parsley, drizzle oil and add salt and pepper.
- Let it chill for 15-30 minutes.
