Tomato, Cucumber and Avocado Salad

Ingredients

  • 1 1/2 cup grape tomatoes, sliced
  • 1 whole cucumber, peeled and diced
  • 1/2 cup onion, finely chopped
  • 1 avocado
  • 4 cups romaine lettuce
  • 2 cups celery, chopped
  • 1Tbsp. parsley, finely chopped
  • 2 Tbsp. extra virgin olive oil
  • Sea salt and black pepper to taste

Directions

  1. Clean and cut all vegetables then place in a medium-sized bowl.
  2. Sprinkle parsley, drizzle oil and add salt and pepper.
  3. Let it chill for 15-30 minutes.
