Ingredients
- 1 lime
- 1/2 cup cilantro
- 1/2 onion, finely chopped
- 1 lb. fresh tomato, chopped
- 1 jalapeno, finely chopped, no seeds
- Pinch of dried oregano
- Pinch of ground cumin
- Sea salt and black pepper to taste
Directions
- Chop tomatoes, jalapeno and onion then place in a food processor. Pulse once or twice to finely dice. If you don’t have a processor, just finely dice ingredients with your knife.
- Place veggie mix in a serving bowl and stir in oregano, cumin, salt, pepper and squeeze in the juice from the lime.
- Let it chill for 30 minutes.
