Ingredients
- 1 cup orzo
- 2 cups baby arugula
- 1/4 cup chopped sun-dried tomatoes
- 1/4 cup Parmesan
- 2 tbsp butter
- 1 tsp lemon zest
- salt and pepper to taste
Directions

Cook orzo as directed. Drain, reserving 1/4 cup cooking water. Toss the orzo and cooking water with arugula, sun-dried tomatoes, Parmesan, butter and lemon zest; season with salt and pepper.
