Cacker (or macaroon) Pie

Ingredients

  • 3 egg whites
  • 1/4 tsp. ream of tartar
  • 1 cup sugar
  • 12 to 16 unsalted soda crackers (or macaroons)
  • 1 tsp. vanilla extract
  • 1/2 to 3/4 cup chopped nuts
  • 1/2 pint whipping cream
  • Small jar pineapple preserves
  • Small amount of shredded or grated coconut, if desired

Directions

  1. Beat egg whites until foamy; add cream of tartar and beat until stiff; add sugar and bet again.
  2. Crush the soda crackers into a bowl; add vanilla and nuts. Fold in egg white mixture.
  3. Pour into a greased 9-inch pie plate and bake 30 to 40 minutes in a 350 degree oven.
  4. cool thoroughly.

  5. Whip cream until stiff and add pineapple preserves. Spread over pie and, if desired, sprinkle with coconut.
  6. Pie will keep in the refrigerator 2 to 3 days.
  7. When prepared in advance, let pie cool, then wrap in foil and refrigerate until ready to serve.
