Cacker (or macaroon) Pie

Ingredients
- 3 egg whites
- 1/4 tsp. ream of tartar
- 1 cup sugar
- 12 to 16 unsalted soda crackers (or macaroons)
- 1 tsp. vanilla extract
- 1/2 to 3/4 cup chopped nuts
- 1/2 pint whipping cream
- Small jar pineapple preserves
- Small amount of shredded or grated coconut, if desired
Directions
- Beat egg whites until foamy; add cream of tartar and beat until stiff; add sugar and bet again.
- Crush the soda crackers into a bowl; add vanilla and nuts. Fold in egg white mixture.
- Pour into a greased 9-inch pie plate and bake 30 to 40 minutes in a 350 degree oven.

- Whip cream until stiff and add pineapple preserves. Spread over pie and, if desired, sprinkle with coconut.
- Pie will keep in the refrigerator 2 to 3 days.

When prepared in advance, let pie cool, then wrap in foil and refrigerate until ready to serve.
