Ingredients
- 1 lb. boneless pork chops or lean boneless pork
- 4 Tbsp. lime juice
- 2 Tbsp. snipped fresh cilantro
- 1 1/2 tsp. grated fresh ginger
- Nonstick cooking spray
- 1/8 tsp. salt
- 1/8 tsp. freshly ground black pepper
- 4 8-inch flour tortillas or 6-inch corn tortillas
- Yellow, red, and/or green sweet pepper strips (optional)
- Fresh or bottled salsa (optional)
- Lime wedges (optional)
- Fresh cilantro sprigs (optional)
Directions
- Trim fat from pork. Partially freeze pork. Slice

meat across the grain into thin strips. Combine cilantro, and the ginger in a shallow dish. Stir in pork. Let stand at room temperature for 15 minutes. Remove pork from marinade with a slotted spoon and pat dry with paper towels. Discard marinade.
- Spray a large nonstick skillet with nonstick cooking spray. Preheat over medium-high heat. Add half of the pork to the hot skillet. Stir-fry for 2 to 3 minutes or until pork is tender. Remove pork from the skillet. Repeat with remaining pork.
- Return all pork to the skillet; cook and stir 15 seconds more to heat through. Place on serving platter; drizzle the remaining 1 Tbsp. juice over all. Sprinkle with the remaining 1 Tbsp. snipped cilantro, the salt, and the pepper, salsa, lime wedges, and additional cilantro.
