- 1/2 cup Onion, diced
- 1 Red or yellow pepper, rinsed, seeded and diced
- 1/2 (15oz) can Black beans, rinsed and drained
- 2 cups Cooked quinoa
- 1 cup Salsa
- 1 Avocado, peeled and diced
- juice from 1/2 lime
- 1/4 Cup cilantro
- To taste hot sauce
- To taste Salt and black pepper
- 8 leafs Boston Bibb lettuce
