Roasted Parmesan Carrots

Ingredients

  • 1 lb carrots
  • 1 tsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp pepper
  • 1/4 tsp dried thyme
  • 3 tbsp grated Parmesan

Directions

  1. Cut carrots into sticks. Toss with olive oil, salt, pepper and thyme; spread in a greased 15×10×1-inch baking pan. Roast at 450 12-15 minutes, stirring once. Toss with Parmesan.
