Egg Roll Noodle Bowl

Ingredients

  • 1 tbsp sesame oil
  • 1/2 lb ground pork
  • 1 tbsp soy sauce
  • 1 garlic clove, minced
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/4 tsp ground turmeric
  • 1/4 tsp pepper
  • 6 cups shredded cabbage
  • 2 large carrots, shredded
  • 4 oz thin rice noodles
  • 3 green onions, thinly sliced
  • additional soy sauce, optional

Directions

  1. In a large skillet, heat oil over medium-high heat. Add pork; cook 4-6 minutes or until browned, breaking into crumbles. Stir in soy sauce, garlic and seasonings. Add the cabbage and carrots; cook for 4-6 minutes longer or until vegetables are tender, stirring occasionally.

  2. Cook rice noodles as directed; drain and immediately add to pork mixture, tossing to combine. Sprinkle with green onions. If desired, serve noodle bowl with additional soy sauce.
