Lemon Roasted Brussels Sprouts

Ingredients
- 2 lbs. Brussels sprouts, trimmed
- 1/4 cup olive oil
- Salt and ground black pepper
- Zest and juice of 2 lemons
Directions
- Heat oven to 425 degrees. Line a rimmed baking sheet with foil or parchment paper.
- Cut each Brussels sprout in half. or if necessary quarters to make pieces of uniform size.
- In a large bowl, combine the sprouts, olive oil, salt, pepper and lemon zest and toss well to coat. Arrange sprouts in an even layer on a rimmed baking sheet. Roast 25 to 40 minutes, stirring occasionally, or until sprouts are tender and golden brown to your liking. Squeeze juice over sprouts. Serve warm or at room temperature.
