Lemony Lentil Salad with Feta

Ingredients

  • 1/3 cup fresh lemon juice
  • 1/3 cup chopped fresh dill
  • 2 tsp. Dijon mustard
  • 1/4 tsp. coarse salt and pepper (or to taste)
  • 1/3 cup extra-virgin olive oil
  • 3 cups cooked brown lentils
  • 1 cup crumbled feta cheese
  • 1 medium red bell pepper, seeded and diced (about 1 cup)
  • 1 cup diced seedless cucumber
  • 1/2 cup finely chopped red onion

Directions

  1. Whisk lemon juice, dill, mustard, salt and pepper in large bowl. Gradually whisk into oil. Add cooked lentils, feta, bell pepper, cucumber and onion; toss to coat and serve.
