Ingredients
- Non-stick cooking spray
- 1 can (8 oz.) tomato sauce
- 3 Tbsp. spicy brown mustard
- 1 Lb. ground chick beef (80 percent lean)
- 1 can (14.5 oz.) petite diced tomatoes, drained
- 1/3 cup finely chopped yellow onion
- 3/4 cup Italian-style bread crumbs
- 1 egg, beaten
- 1/8 tsp. salt
- 1/8 tsp. ground black pepper
Directions
- Heat oven to 400 degrees. Lightly spray 6 medium muffin cups with cooking spry; set aside.
- In small bowl, combine tomato sauce, brown sugar and mustard; set aside.
- In large bowl, combine remaining ingredients. Add 1/4 mixture and incorporate. Divide meat mixture evenly and place into prepared muffin cups. Place muffin pan on baking sheet.
- Bake 25 minutes or until no longer pink in centers (165 degrees). Top each mini loaf with 2 Tbsp. sauce; bake 5 minutes more or until sauce is et. Serve with remaining sauce.
