Ingredients
- Bag of potatoes, russet or Idaho
- onions
- white vinegar
- water
- 1 Tbsp salt
- 1 Tbsp sugar
- pepper
- a good mayonnaise
Directions

Boil as many potatoes as you like, we do a whole 5 pound bag at a time.

Drain the potatoes and let cool a bit, then peel off the skins with your fingers, it should slip right off, you might run it under the cold water.

Cut up the cooked potatoes into a large bowl.

Chop up some onions, maybe 2 if you do a whole bag of potatoes, and add these to the cut up potatoes.

Put about a cup of water in a bowl, add a the salt, sugar, and a few tablespoons of vinegar. Taste this mixture, and add a bit more or less of the ingredients if needed, you want it to be sweet and salty and sour all at once! Add some pepper if you like.

Pour this mixture over the potato and onions, refrigerate for at least a couple of hours, overnight is even better.

When the salad is done cooling in the fridge, take it out and stir in some mayonnaise, go lightly with this, just enough to hold everything together.

You are done, go eat some!
