Greek Meatball Flatbread

Ingredients

  • 1/2 cucumber, seeded
  • 1 cup plain Greek yogurt
  • 1/2 tsp. salt
  • Black pepper
  • 1/2 tsp. minced garlic
  • 1 Tbsp. lemon juice
  • 1 1/4 lb. meatballs( 1 oz. size)
  • 6 soft flatbreads
  • 3 cups mixed baby greens

Directions

  1. Preheat oven to 350 degrees.

  2. Grate cucumber into bowl and drain in a colander. Stir in yogurt, salt pepper, and lemon juice, refrigerate.

  3. Place meatballs on a lightly oiled baking sheet. Bake 25 minutes. Place flatbreads in oven for the last 3 minutes of baking time.

  4. Place flatbread on plates. Top each with 1/2 cup greens, 3 chopped meatballs and cucumber sauce.
