Pineapple Jerk Chicken

Ingredients
- 1 cup long-grain rice
- 1 lb. boneless skinless chicken breast, cut into 1-inch pieces
- 1 tsp. Jamaican jerk blend seasoning
- 1 Tbsp. vegetable oil
- 1 medium onion, diced
- 1 can (20 oz.) pineapple chunks in juice, drained
- 1 can ( 13.5 oz.) Goya black beans, drained and rinsed
- 1 can (4.5 oz.) chopped green chiles
- 1/2 cup Jamaican jerk marinade
Directions
- Prepare rice according to package directions.
- Sprinkle chicken with jerk seasoning. In a 12-inch skillet over medium-high heat, cook chicken pieces in hot oil until browned on all sides, about 5 minutes. Add chicken pieces, pineapple chunks, black beans, green chiles and jerk marinade. Over high heat, bring to boil; reduce heat to low. Cover and simmer 10 minutes until chicken is tender, stirring occasionally.
- Serve chicken mixture over rice.
