Lemon Curd

Ingredients

  • 3 eggs
  • 3 lemons
  • 1 cup sugar
  • 8 Tbsp butter

Directions

  1. Beat eggs lightly and set aside.

  2. Grate 2 tsp lemon zest and squeeze 1/2 cup juice from the lemons. Put juice, zest, sugar, and butter in a heat-proof bowl.

  3. Set bowl over a pan of simmering water (or use double-boiler if you have one), whisk mixture until butter is melted and sugar dissolves.

  4. Slowly whisk 1/2 cup of this mixture into the eggs, then pour egg mixture in a slow steady stream back into the lemon mixture, whisking constantly over the simmering water.

  5. Continue stirring until mixture thickens and coats the back of a spoon, about 10 to 15 minutes. Strain.

  6. Refrigerate for 4 hours or until set. Serve with toast, scones, or biscuits, etc.
