Roasted Salmon with Honey-Dijon Glaze

Ingredients
- 1 (1 1/4 lb.) skin-on salmon
- 1/4 tsp. salt
- Freshly ground black pepper
- 2 Tbsp. whole-grain Dijon mustard
- 2 Tbsp. honey
- 1 Tbsp. extra-virgin olive oil
- 1 lemon, cut in half
- 6 to 8 sprigs fresh thyme (optional)
Directions
- Preheat oven to 450 degrees. Line a baking sheet with aluminum foil.
- Arrange salmon, skin-side-down, on prepared pan. Sprinkle with salt and pepper.
- In a small bowl, whisk together mustard, honey and olive oil. Pour over salmon. Cut 1 half of lemon into thin slices, reserving remaining half

for squeezing over salmon. Place lemon slices ad thyme sprigs on top of salmon. Bake 10 to 12 minutes, until just cooked through. Remove salmon from oven and squeeze remaining lemon half over top.
