Spinach Salad with Zesty Blue Cheese Dressing

Ingredients

  • 1/4 cup white vinegar
  • 2 tsp. Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp. freshly ground pepper
  • 2/3 cup olive oil
  • 1 (4 oz.) pkg. crumbled blue cheese
  • 1 (10 oz.) pkg. fresh spinach
  • 1/2 (8 oz.) pkg. sliced fresh mushrooms
  • 1 cup grape or cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • Creole Croutons:
  • 5 (1-inch-thick) white bread slices, cubed
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup butter or margarine, melted
  • 1/2 Tbsp. Creole seasoning

Directions

  1. Whisk together first 4 ingredients; gradually whisk in oil. Add cheese, and stir gently.
  2. Combine spinach and next 3 ingredients; drizzle with dressing, tossing to coat. Sprinkle with Creole Croutons. Serve immediately.
  3. Creole Croutons:

  4. Combine all ingredients in a large zip-top plastic bag; seal bag, and shake to coat.
  5. Arrange seasoned bread cubes in an even layer on an aluminum foil-lined baking sheet.
  6. Bake at 300 degrees for 30 minutes or until croutons are crisp and golden.
