Spinach Salad with Zesty Blue Cheese Dressing

Ingredients
- 1/4 cup white vinegar
- 2 tsp. Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp. freshly ground pepper
- 2/3 cup olive oil
- 1 (4 oz.) pkg. crumbled blue cheese
- 1 (10 oz.) pkg. fresh spinach
- 1/2 (8 oz.) pkg. sliced fresh mushrooms
- 1 cup grape or cherry tomatoes, halved
- 1/2 small red onion, thinly sliced
- Creole Croutons:
- 5 (1-inch-thick) white bread slices, cubed
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup butter or margarine, melted
- 1/2 Tbsp. Creole seasoning
Directions
- Whisk together first 4 ingredients; gradually whisk in oil. Add cheese, and stir gently.
- Combine spinach and next 3 ingredients; drizzle with dressing, tossing to coat. Sprinkle with Creole Croutons. Serve immediately.

Creole Croutons:
- Combine all ingredients in a large zip-top plastic bag; seal bag, and shake to coat.
- Arrange seasoned bread cubes in an even layer on an aluminum foil-lined baking sheet.
- Bake at 300 degrees for 30 minutes or until croutons are crisp and golden.
