Spinach with Crowder Peas

Ingredients

  • 2 cups fresh or frozen Crowder peas
  • 1 cup chicken, ham, or vegetable broth
  • 3/4 tsp. salt, divided
  • 2 Tbsp. butter or margarine
  • 1 small sweet onion, chopped
  • 1 bunch green onions, chopped
  • 2 garlic cloves, minced
  • 1 (10 oz.) pkg. fresh spinach 1/2 tsp. dried crushed red pepper

Directions

  1. Bring peas, broth and 1/2 tsp. salt to a boil in a saucepan over high heat. Reduce heat to low; cover and simmer 30 minutes or until peas are tender. Set aside.
  2. Melt butter in a large skillet over medium heat. Add sweet onion, green onions, and minced garlic, saute 2 minutes. Stir in spinach, remaining 1/4 tsp. salt, and crushed red pepper; saute 1 to 2 minutes or until spinach wilts. Serve immediately with peas.
