Ingredients
- 11/4 pounds basil chicken sausage, casings removed (or Sweet Italian Turkey Sausage if you cannot find this type)
- 5 cups chopped kale
- 16 oz sliced portobello mushrooms
- 1/2 cup sun dried tomatoes (not in oil)
- 1 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon dried basil
- 1/2 cup shave parmesan cheese + more for garnish
- 1 pound gnocchi (I love DeLallo's!)
Directions
- In a large skillet, add the chicken sausage. Saute until cooked through, 8 – 10 minutes. Add the chopped kale, portobello mushrooms, sun dried tomatoes, garlic powder, red pepper flakes, salt, pepper and dried basil.
- Meanwhile, cook the gnocchi according to the package instructions. Drain and set aside until the meat mixture is cooked if they finish before.
- Once the gnocchi is finished, add it to the meat mixture along with the parmesan cheese. Toss well.
- Divide between 4 bowls and top with additional parmesan, if desired.
