Marinated red mullet

Ingredients

  • red mullet (choice of fish depends on dinner guests)
  • olive oil
  • rosemary (fresh or dry, amount according to taste)
  • flour
  • vinegar
  • salt, pepper
  • 2 garlic cloves

Directions

  1. After cleaning the fish we lightly salt them and let them sit for an hour until the salt is absorbed.

  2. We then rinse them, cover with flour and fry in plenty of oil so they don’t burn.

  3. When they are done we remove them from the oil. If the oil left is not enough we may add more to make the sauce as oily as we like.

  4. We chop the garlic cloves and add them to the oil with two spoonfuls of flour, the rosemary and three spoonfuls of vinegar.

  5. We leave them on the fire for a few minutes and then pour over the mullet. The same recipe applies to other types of fish.
