Ingredients
- 2 cups green peas
- 1 Tbsp. sumac
- 1/4 cup grated pecorino
- 1 Tbsp. finely chopped mint
- all-purpose flour
- 12 eggs
- sourdough bread crumbs
- oil
- chili and smoked pimento aioli
- Red chili, chopped, for garnish
- Sea salt
Directions
- Parboil peas to slightly soften them. In a mixing bowl, mash peas with sumac, cheese and mint. Form a small ball of pea mixture, coat in flour, dredge in beaten egg and coat with bread crumbs. repeat with remaining mixture. Refrigerate for a few hours to harden.
- Heat oil in heavy saucepan or skillet; deep fry bombs until golden brown.
