Pea Bombs

Ingredients

  • 2 cups green peas
  • 1 Tbsp. sumac
  • 1/4 cup grated pecorino
  • 1 Tbsp. finely chopped mint
  • all-purpose flour
  • 12 eggs
  • sourdough bread crumbs
  • oil
  • chili and smoked pimento aioli
  • Red chili, chopped, for garnish
  • Sea salt

Directions

  1. Parboil peas to slightly soften them. In a mixing bowl, mash peas with sumac, cheese and mint. Form a small ball of pea mixture, coat in flour, dredge in beaten egg and coat with bread crumbs. repeat with remaining mixture. Refrigerate for a few hours to harden.
  2. Heat oil in heavy saucepan or skillet; deep fry bombs until golden brown.
