Herbed Barbecued Venison

Ingredients
- 3 1/2 oz. lard
- 3 1/2 oz. butter
- Venison shoulder
- Handful each fresh sage, thyme, and rosemary
- Peeled, crushed cloves of garlic bulb
- 1 Tbsp. freshly cracked black pepper
- 1 cup red wine
Directions
- With a large sheet of aluminum foil, make a bowl for the shoulder. Rub softened lard and butter on shoulder, and spread on roughly chopped herbs. Add garlic and pepper to shoulder. Pour on the wine and wrap foil tightly.
- Put shoulder in hooded grill on low heat, 4-6 hours or until done.
