Ginger Carrot Soup

I sometimes use a mix of sweet potato and carrots or just sweet potatoes, and it is very yummy!

Ingredients
- 2 Lb. Carrots
- 4 C water
- 4 Tbs. Butter/oil
- 1 1/2 cups chopped onion
- 2 med. cloves garlic
- 2 Tbs. freshly grated ginger
- 1 1/2 tsp. salt
Directions

fry onions , ginger, and garlic until tender

Peel & trim carrots
-
cut into 1 inch chunks
-
cover with water and boil
-
simmer until carrots tender
-
blend until smooth
