Ginger Carrot Soup

I sometimes use a mix of sweet potato and carrots or just sweet potatoes, and it is very yummy!

Ingredients

  • 2 Lb. Carrots
  • 4 C water
  • 4 Tbs. Butter/oil
  • 1 1/2 cups chopped onion
  • 2 med. cloves garlic
  • 2 Tbs. freshly grated ginger
  • 1 1/2 tsp. salt

Directions

  1. fry onions , ginger, and garlic until tender

  2. Peel & trim carrots

  3. cut into 1 inch chunks

  4. cover with water and boil

  5. simmer until carrots tender

  6. blend until smooth
