Morocan Couscous & Pumpkin

I sometimes use quinoa instead of couscous and is tasty and healthy!

Serves 4 people

Ingredients

  • 1 lb. pumpkin chopped
  • 1 C water
  • 1 small onion
  • 1 tsp. cinnamon
  • 1/2 C maple syrup

Directions

  1. Steam pumpkin in water 5 min. (until tender)

  2. add remaining ing.

  3. simmer in covered pot for 2 min.

  4. turn off heat

  5. let covered pot sit for 3 min.
