Florentine Rice

Ingredients

  • 1 tsp. olive oil
  • 1 tsp. butter
  • 1 medium red bell pepper, diced
  • 1/3 cup sliced green onions
  • 1 clove garlic, minced
  • 8 oz. fresh spinach leaves, torn into pieces
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. white pepper
  • 2 1/2 cups cooked brown rice
  • 2 Tbsp. freshly grated parmesan cheese

Directions

  1. In a large skillet, heat oil and butter over medium until the butter melts. Add red bell pepper and green onions; cook 3 minutes. Add garlic; cook 30 seconds. Add spinach, rosemary and white pepper and cook until the spinach wilts. Add rice and parmesan cheese; cook and stir 5 minutes or until rice is heated through and cheese has melted. Serve hot.
