Honeyed Pork Tenderloin with Avocado-Peach Salsa

Ingredients

  • 1/2 cup soy sauce
  • 1 Tbsp. sesame oil
  • 2 tsp. teriyaki sauce
  • 2 garlic cloves, minced
  • 1 tsp. ground ginger
  • 1 (1lb.) pork tenderloin
  • 1/4 cup honey
  • 2 Tbsp. brown sugar
  • 4 1/2 Tbsp. sesame seeds
  • Avocado- Peach Salsa:
  • 1 cup peeled , diced fresh peaches (about 2 small ripe peaches)
  • 1 large tomato, diced
  • 1/2 cup diced avocado (about 1 small avocado)
  • 1 Tbsp. minced red onion
  • 1 Tbsp. lime juice
  • 1 tsp. olive oil
  • 1/4 tsp. salt
  • `1/4 tsp. ground red pepper
  • 1/4 cup diced jicama (optional)

Directions

  1. Combine first 5 ingredients in a large shallow dish or heavy-duty a zip-top plastic bag; add pork. Cover or seal, and chill 6 to 8 hours.
  2. Remove pork from marinade, discarding marinade.
  3. Stir together honey and brown sugar. Brush pork with honey mixture, and sprinkle with sesame seeds. Place on a lightly greased rack in a roasting pan.
  4. Bake at 400 degrees for 25 to 30 minutes or until meat thermometer inserted into thickest portion reaches 160 degrees. Cut pork into slices; serve with Avocado-Peach Salsa.

  6. Combine first 8 ingredients and, if desired, jicama In a large bowl; cover and chill until ready to serve.
