Lime-Steamed Salmon

Serves 4 people

Ingredients

  • 2 limes
  • 2 lb. skinless salmon fillet, cut crosswise into 8 slices
  • 1 Tbsp. grated fresh ginger
  • 1 Tbsp. toasted sesame oil
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper
  • 8 oz. trimmed green beans
  • Lime wedges (optional)

Directions

  1. Finely shred 2 tsp. peel from limes; set aside.
  2. Thinly slice limes; lay slices evenly in the bottom of a steamer basket. Place fish in a single layer on top of lime slices. Stir together reserved peel, ginger, oil, salt and pepper in a small bowl; brush mixture evenly over four of the salmon pieces.

  3. Place green beans in a medium saucepan in a
  4. small amount of boiling salted water. Return to boiling; reduce heat. Simmer, covered, for 10 to 12 minutes or until crisp-tender. Drain well. Meanwhile, place 4 cups water in a very large skillet. Bring just to boiling; reduce heat. Carefully place steamer basket into skillet. Cover and steam over gently boiling water for 10 to 12 minutes or until fish flakes easily with a fork.

  5. To serve, arrange beans in a serving dish. Remove fish from lime slices; discard lime slices. Arrange half the pieces of fish on top of
  6. beans; if desired, serve with fresh lime wedges. Set aside remaining steamed fish until cool, cover and chill up to 48 hours.

  7. Makes 4 serving now, 4 servings later.
