Coriander Crusted Pork Tenderloin

Serves 4 people

Ingredients

  • 2 whole pork tenderloins (around 1 pound each)
  • 2.5 tbsp ground Coriander seed
  • salt & pepper
  • 1/2 cup Light soy sauce
  • 2.5 tbsp Sesame oil
  • 1 tbsp Cilantro, finely chopped
  • 1/2 tsp Thai chili sauce

Directions

  1. Heat oven to 425˚F.

  2. Season meat well with salt and pepper, then crust/rub all over with Coriander.

  3. Place in shallow roasting pan for 15-20 minutes, until internal temperature (measured with a meat thermometer) reads 155˚-160˚F.

  4. Combine soy sauce, Sesame oil, chopped Cilantro, and chili sauce to prepare sauce while pork is roasting.

  5. Remove pork from oven and immediately pour 1/3 the sauce onto the tenderloin (You can make several small incisions on tenderloin to ensure it is fully cooked, and then pour the sauce into the cuts).

  6. Let stand 5 minutes before slicing to serve. Serve with sauce.
