Coriander Crusted Pork Tenderloin

Ingredients
- 2 whole pork tenderloins (around 1 pound each)
- 2.5 tbsp ground Coriander seed
- salt & pepper
- 1/2 cup Light soy sauce
- 2.5 tbsp Sesame oil
- 1 tbsp Cilantro, finely chopped
- 1/2 tsp Thai chili sauce
Directions

Heat oven to 425˚F.

Season meat well with salt and pepper, then crust/rub all over with Coriander.

Place in shallow roasting pan for 15-20 minutes, until internal temperature (measured with a meat thermometer) reads 155˚-160˚F.

Combine soy sauce, Sesame oil, chopped Cilantro, and chili sauce to prepare sauce while pork is roasting.

Remove pork from oven and immediately pour 1/3 the sauce onto the tenderloin (You can make several small incisions on tenderloin to ensure it is fully cooked, and then pour the sauce into the cuts).

Let stand 5 minutes before slicing to serve. Serve with sauce.
