Lemon Chili Avocado Toast

Serves 4 people

Ingredients

  • 2 ripe avocados, halved and pitted
  • Juice of 1 lemon
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 slices whole wheat bread
  • 1 tsp. dried chili flakes

Directions

  1. Scoop the flesh out of the avocado mixture.
  2. Add lemon juice and salt and pepper. Mash well with a fork. Set aside.
  3. Toast bread and spread each slice with avocado mixture.
  4. Sprinkle with chili flakes and serve.
  5. Optional Toppings:

  6. Diced tomatoes, crumbled bacon and sliced red onion

  7. Scrambled eggs and a drizzle of sour cream

  8. Poached eggs and pesto

  9. Feta Cheese crumbles and chives

  10. Cooked chicken breast for an open-faced sandwich
