Honey Chicken and Broccoli Stir-Fry

Ingredients

  • 1 1/4 lb. boneless, skinless chicken breasts
  • 1 tsp. salt
  • Black pepper
  • 4 Tbsp. cornstarch
  • 1 cup reduced-sodium chicken broth
  • 1/3 cup honey
  • 3 Tbsp. reduced-sodium soy sauce
  • 1/2 tsp. crushed red pepper
  • 2 Tbsp. olive oil
  • 4 cups broccoli florets
  • 1 yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 3 cups cooked long-grain white rice
  • 1/2 cup dry roasted salted peanuts

Directions

  1. Cut chicken into 1-inch pieces and toss in a medium bowl with salt, pepper and cornstarch.
  2. In a small bowl, stir together broth, honey, soy sauce and crushed red pepper.
  3. Heat oil in a large skillet over medium-high heat. Cook chicken until lightly browned, 3 to 4 minutes. Add vegetables and garlic and cook, stirring constantly, until vegetables are soft, 3 to 4 minutes.
  4. Add broth mixture to pan. Toss well; bring to a boil over high heat. Cook 1 minutes to thicken sauce. Serve with cooked rice and top with peanuts.
  5. Any vegetables you prefer can be substituted, or added to this dish. Squash, zucchini, cauliflower, carrots, and even apples, all work well.
