Grilled Corn with Fresh Herb Oil

Ingredients

  • 4 ears corn on the cob, shucked
  • 1/3 cup olive oil
  • 1 garlic clove, grated
  • 1/4 tsp red pepper flakes
  • 1/4 cup chopped fresh parsley
  • 2 scallions, chopped
  • Grated zest and juice of 1/2 lemon
  • Kosher salt

Directions

  1. Preheat a grill to medium high. Lay out 4 sheets of foil Place an ear of corn on each piece of foil and wrap tightly. Grill, turning a few times, 15 minutes.

  2. Meanwhile, heat the olive oil with garlic and red pepper flakes in a small saucepan over medium heat, about 1 minute. Remove from the heat and add parsley, scallions, lemon zest and lemon juice; season with salt.

  3. Remove corn from the grill and open carefully. Brush with herb oil.
