Southwest Chicken Dinner

Ingredients

  • 2 cups water
  • 2 tbsp olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup uncooked long grain rice
  • 1/4 cup chopped fresh cilantro
  • 1 tsp grated lime peel
  • 2 tbsp lime juice
  • 1 tbsp taco seasoning
  • 4 chicken breasts
  • 1 cup canned black beans, rinsed and drained
  • Optional toppings: pico de gallo, shredded cheese and sour cream

Directions

  1. Bring water, 1 tbsp oil, salt and pepper to a boil. Add rice. Reduce heat; simmer, covered, 15-17 minutes or until liquid is absorbed. Remove from heat. Stir in cilantro, lime peel and juice.

  2. Season chicken. In a skillet, heat remaining oil over medium heat. Cook chicken 4 minutes per side.

  3. Warm beans in a microwave. To serve, top the rice with beans, sliced chicken and desired toppings.
