Ingredients
- 2 cups water
- 2 tbsp olive oil, divided
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 cup uncooked long grain rice
- 1/4 cup chopped fresh cilantro
- 1 tsp grated lime peel
- 2 tbsp lime juice
- 1 tbsp taco seasoning
- 4 chicken breasts
- 1 cup canned black beans, rinsed and drained
- Optional toppings: pico de gallo, shredded cheese and sour cream
Directions

Bring water, 1 tbsp oil, salt and pepper to a boil. Add rice. Reduce heat; simmer, covered, 15-17 minutes or until liquid is absorbed. Remove from heat. Stir in cilantro, lime peel and juice.

Season chicken. In a skillet, heat remaining oil over medium heat. Cook chicken 4 minutes per side.

Warm beans in a microwave. To serve, top the rice with beans, sliced chicken and desired toppings.
