Ingredients
- 4 boneless pork chops
- 1/2 tsp garlic powder
- 1/4 tsp pepper
- 2 tbsp olive oil, divided
- 1 lb sliced mushrooms
- 4 green onions, chopped
- 1/4 cup Dijon
- 1 tsp chipotle sauce
- 1 tbsp red wine
- 1 tbsp minced tarragon

Preheat oven to 400. Sprinkle chops with garlic powder and pepper. In a large ovenproof skillet, heat 1 tbsp oil over medium heat. Brown chops on both sides; remove from pan.

In same skillet, heat remaining oil on medium-high heat. Add mushrooms and onions; cook and stir 3 minutes. Add chops to pan. Bake, uncovered, 8-10 minutes or until pork is 145.

In a bowl, mix mustard, hot sauce and, if desired, wine; top chops. Bake 2 minutes more. Top with tarragon.
