Fresh Peach and Tomato Salsa

Ingredients
- 1 medium fresh tomato diced
- 1/4 red onion minced
- 1 yellow bell pepper diced
- 1 bunch fresh cilantro minced
- 2 fresh peaches peeled
- 1 Tbsp. water
- 1/2 jalapeno diced
- 3 tsp. minced garlic
- 1/2 tsp. cumin
- 1 tsp. sugar
- 1/4 tsp. turmeric
- sea salt
Directions
- In a bowl, combine tomatoes, onion, jalapenos, bell pepper and fresh cilantro.
- Puree the peeled peaches using a blender. Add the water to make it an easy puree.
- To the puree mixture, add garlic, chili powder, cumin, sugar and turmeric. Add salt to taste.
- Mix the puree with the tomato mixture and let sit at room temperature for at least 30 minutes to an hour. The longer you allow it to marinade, the better the flavor.
- Enjoy with chips or as a garnish for fish tacos, grilled chicken or fajitas.
