Plum-and- Sweet Onion Pizza

Ingredients
- 3 sweet onions, thinly sliced and separated into rings
- 1 Tbsp. coarse- grain mustard
- 1 Tbsp. balsamic vinegar
- 1 Tbsp. extra-virgin olive oil
- 8 fresh plums, peeled and chopped
- 2 tsp. chopped fresh sage
- 2 tsp. chopped fresh rosemary
- 1 Tbsp. brown sugar
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 (24 oz.) pkg. pizza crusts
- 6 oz. Gorgonzola cheese, crumbled
- Garnish: fresh sage sprigs
Directions
- Cook first 3 ingredients in hot oil in a Dutch oven over medium heat, stirring constantly, 30 minutes or until onion is caramel colored. Stir in plum and next 3 ingredients. Cook, stirring occasionally, 10 to 115 minutes or until plum is tender. Stir in salt and pepper.
- Place crust on a 12-inch round pizza pan.
- Bake at 400 degrees for 8 minutes or until golden.
- Spread plum mixture over pizza crust, and sprinkle evenly with crumbled cheese. Bake 10 more minutes or until cheese melts. Garnish, if desired.
