Roast Chicken

Ingredients
- 6 chicken breasts, rinsed and patted dry
- 3/4 cup butter, softened
- 3 whole lemons
- 4 sprigs of rosemary
- salt and pepper, to taste
Directions
- Preheat oven to 400 degrees.
- Zest two of the lemons, finely mince leaves from rosemary sprigs (strip leaves from stem). Combine softened butter, lemon zest, rosemary, salt and pepper.
- Arrange chicken in an iron skillet.
- Smear butter mixture over chicken with fingers. Squeeze juice of one lemon over chicken. Slice remaining lemons, and place on top of chicken.
- Bake chicken for 35- 45 minutes, or until skin is deep golden brown.
