Roast Chicken

Serves 6 people

Ingredients

  • 6 chicken breasts, rinsed and patted dry
  • 3/4 cup butter, softened
  • 3 whole lemons
  • 4 sprigs of rosemary
  • salt and pepper, to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Zest two of the lemons, finely mince leaves from rosemary sprigs (strip leaves from stem). Combine softened butter, lemon zest, rosemary, salt and pepper.
  3. Arrange chicken in an iron skillet.
  4. Smear butter mixture over chicken with fingers. Squeeze juice of one lemon over chicken. Slice remaining lemons, and place on top of chicken.
  5. Bake chicken for 35- 45 minutes, or until skin is deep golden brown.
