Penne with Chunky Kalamata Olive Sauce

Ingredients
- 1 14 1/2 oz. can diced tomatoes with peppers and onions
- Nonstick cooking spray
- 1 large onion finely chopped (about 1 cup)
- 4 cloves garlic, minced
- 1 7 oz. jar roasted red pepper, drained and chopped (1 cup)
- 4 oz. penne pasta
- 2 tsp. dried basil, crushed or 2 Tbsp. snipped fresh basil
- 1/2 cup coarsely chopped pitted Kalamata olives
Directions
- Drain tomatoes, reserving 1/4 cup of the juice; set aside. Spray a saucepan with nonstick cooking spray. Cook and stir onion and garlic over medium heat for 5 minutes or until tender. Add tomatoes, reserved juice, peppers, and dried

basil (if using).
- Bring mixture to boiling. Reduce heat and simmer, uncovered, for 15 minutes or until most of the liquid has evaporated, stirring occasionally. Meanwhile, prepare pasta according to package directions; drain.
- Remove sauce from heat. Stir in olives and fresh basil (if using). Serve over pasta.
