Tuna with Wheat Berries or Barley, Artichokes and Tomatoes

Ingredients

  • 1 cup uncooked wheat berries such as farro, kamut or red wheat OR 1 cup barley
  • 4 cups water or broth
  • 2 Tbsp. extra-virgin olive oil
  • juice of 2 lemons
  • 2 Tbsp. chopped fresh parsley, plus leaves from a few sprigs
  • 2 tsp. chopped fresh tarragon
  • Salt and ground black pepper
  • 1 small jar marinated artichoke hearts, drained
  • and roughly chopped
  • 1 (4 to 5 oz..) can oil-packed tuna, lightly drained
  • 1 cup grape or cherry tomatoes, halved or quartered
  • 4 oz. feta cheese, optional

Directions

  1. In medium pot, combine the wheat berries or barley and the water. Bring to a boil; reduce heat and simmer 45 minutes to 1 hour, or until grains are tender, but chewy.
  2. Drain and cool to room temperature.
  3. In a large bowl, whisk together the olive oil, lemon juice and herbs. Season to taste with salt and black pepper. Stir in the drained wheat berries or barley, the artichoke hearts, tuna and tomatoes. Cover and refrigerate until well chilled. Sprinkle with feta cheese and parsley leaves just before serving.
