Aberdeen Sausage

Ingredients

  • 1 lb. ground beef
  • 1/2 lb. smoked ham, ground
  • 1 cup soft bread crumbs
  • 2 Tbsp. Worcestershire sauce
  • 2 tsp. grated lemon rind
  • 1 tsp. sugar
  • 1 tsp. salt
  • 2 eggs
  • Flour

Directions

  1. Mix thoroughly all ingredients, except flour. Shape in a roll about 1 1/2 inches in diameter. Roll in flour and tie in double thickness of cheesecloth. Tie each end of cloth with string. Put on rack in kettle and cover with boiling water. Bring to boil and simmer and simmer 1 1/2 hours. Cool in the broth. Chill and slice thin. Serve with thin slices of rye bread. Garnish with mustard, mayonnaise and/or horseradish, if desired.
