(from transcendent’s recipe box)
Soft peas = good peas :)
Source: Sharon (from RecipeThing user francesca)
Ingredients
- 2 tin Kidney beans
- 2 Onion finely chopped
- 2 Tomato finely chopped
- 4 cloves Garlic finely chopped
- 1/2 Red bell pepper (capsicum) chopped
- 500 grams pumpkin (about as big as a pop tart)
- 2 teaspoons coconut milk powder
- mushrooms sliced if you like.....FRESH tho
Directions
-
Heat one tablespoon off cooking oil in pot ( a pot with a thick base is best (to prevent burning at bottom) as beans must boil for as long as possible to really soften )
-
Add onions, garlic, sweet pepper, allow to sautee for a few mins
-
Add can of red beans after draining half the water
-
Add salt and black pepper along with tomatoes and allow to bubble….cover and leave cooking, stirring occasionally.
-
After 5-10 mins add crushed pumpkin and coconut milk, cover and leave cooking
-
Stir often to avoid sticking or burning
-
Add water if it begins to dry out
-
Taste frequently and add spices to suit…..little cayenne would be good, paprika too.
-
Touch of brown sugar if you go overboard with the spice :) (experience talking :)
-
Allow to boil for as long as possible to truly soften peas
-
Soft peas = good peas :)
