Ingredients

  • 1 1/2 cups dried red or yellow lentils
  • 1 tbsp veg oil
  • 3 cloves garlic, finely chopped
  • 1 tbsp finely chopped fresh ginger root
  • 1 large onion, thinly sliced or chopped
  • 1 tbsp currey powder
  • 4 cups veg stock or water
  • 1 tbsp lemon juice
  • salt
  • pepper
  • 1/4 cup fresh cilantro

Directions

  1. Rinse lentils, pick over.

  2. Heat 1 tbsp oil in large dutch oven.

  3. Add garlic, ginger, onion and cook gently until fragrant.

  4. Add curry powder and cook until fragrant (30 seconds).

  5. Add rinsed lentils and stir.

  6. Add stock and bring to boil.

  7. Reduce heat and simmer gently 30 – 40 minutes (until lentils are tender).

  8. Stir in lemon juice, salt and pepper.
