Apple-Glazed Dessert Pancake

Ingredients

  • 1 Tbsp. margarine
  • 3 cups sliced Rome apple (about 1 lb.)
  • 1 Tbsp. brown sugar
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1/2 cup apple juice
  • 1/4 cup water
  • 1 tsp. cornstarch
  • 1 cup all-purpose flour
  • 2 cups 1% low-fat milk, divided use
  • 2 tsp. salt
  • 1/3 cup sugar
  • 2 large eggs
  • 2 large egg whites
  • Nonstick cooking spray
  • 1 Tbsp. confectioners' sugar

Directions

  1. Preheat oven to 425 degrees.
  2. Melt margarine in a 10-inch cast-iron skillet over medium-high heat. Add apple; saute 3 minutes. Stir in brown sugar, cinnamon and nutmeg; cook 2 minutes.
  3. Combine juice water and cornstarch in a small bowl. Stir well; add to skillet. Bring to a boil; cook 1 minute or until thick, stirring gently. Remove apple mixture from skillet; set aside and keep warm. Wipe skillet clean with a paper towel.
  4. Place skillet in oven for 5 minutes. Combine flour and 1 cup milk in a large bowl; stir well with a whisk. Stir in 1 cup milk, vanilla and next 4 ingredients (vanilla through egg whites); set aside.
  5. Coat skillet with cooking spray until puffy and brown around edges. Remove from oven; sprinkle with confectioners’ sugar. Cut into wedges; top with apple mixture. Serve immediately.
