Fish Cajun Fillets

Ingredients
- 60 g skim-milk powder
- 1 cup water
- 1 tablespoon paprika
- 2 teaspoon turmeric
- 1 teaspoon chilli powder
- 800 g white fish fillets (whiting, snapper, flathead)
- 2 tablespoon olive oil
- 400 g Natural Yoghurt
- 1 small cucumber, finely diced
Directions

Preheat oven 200c and line baking tray with baking paper.

Mik milk powder and water ina small bowl. In a separate bowl mix ground spices.

Dip fish fillets into the milk then roll them in the mixed spices.

Heat oil in a frying pan over high heat. Rapidly fry the fish in batches for 2 minutes each side or until golden. Be careful no to overcrowd the pan as the fish will stew.

Place all fillets on prepared tray and bake for 5 minutes.

Mix yoghurt and cucumber and lightly season. Serve with lemon wedges and yoghurt sacue and with vegetables or salad.
