Ingredients
- 2 chillies
- 1/2t rock salt
- 3-4 garlic cloves
- 1.5 cc ginger
- 2 shallots
- 3 kaffir lime leaves
- coriander root
- 2-3 candlenuts
- 2 slices galangal
- 1 lime
- dash mirin
- dash soy sauce
- 3 salaam leaves
Directions

rub the fish with halved lime

smash other ingredients up in mortar & pestle

rub onto fish – slash fish for better take-up

throw in a bit of mirin etc if you feel like it
