Chicken with Pepita Crema

Ingredients

  • 4 bone-in chicken thighs (about 2 lb. total)
  • 1 Tbsp. extra-virgin olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. plus 1/8 tsp. black pepper
  • 2/3 cup light sour cream
  • 1/2 cup plus 1 Tbsp. raw, hulled unsalted pepitas
  • 1 scallion, chopped
  • 1 clove garlic, chopped

Directions

  1. Heat grill or grill pan to medium. Rub chicken with oil, then season with 1/2 tsp. salt and 1/4 tsp. pepper. Grill 12 to 14 minutes per side, until internal temperature reaches 165 degrees on an instant-read thermometer.
  2. Meanwhile, combine sour cream, 1/2 cup pepitas, the scallion, garlic, 1/4 tsp. salt and 1/8 tsp. pepper in a blender. Process until smooth.
  3. Spoon sauce over chicken. Scatter 1 Tbsp. pepitas over top.
