Chicken with Pepita Crema

Ingredients
- 4 bone-in chicken thighs (about 2 lb. total)
- 1 Tbsp. extra-virgin olive oil
- 1/4 tsp. salt
- 1/4 tsp. plus 1/8 tsp. black pepper
- 2/3 cup light sour cream
- 1/2 cup plus 1 Tbsp. raw, hulled unsalted pepitas
- 1 scallion, chopped
- 1 clove garlic, chopped
Directions
- Heat grill or grill pan to medium. Rub chicken with oil, then season with 1/2 tsp. salt and 1/4 tsp. pepper. Grill 12 to 14 minutes per side, until internal temperature reaches 165 degrees on an instant-read thermometer.
- Meanwhile, combine sour cream, 1/2 cup pepitas, the scallion, garlic, 1/4 tsp. salt and 1/8 tsp. pepper in a blender. Process until smooth.
- Spoon sauce over chicken. Scatter 1 Tbsp. pepitas over top.
