Cuban-Style Pork Chops

Ingredients
- 4 bone-in pork chops (1 inch thick, about 2 lb. total)
- 1 small onion, cut into eighths
- 2 large clovers garlic, roughly chopped
- 3/4 cup fresh orange juice
- 3 Tbsp. fresh lime juice plus 1 Tbsp. zest
- 1 cup cilantro
- 1 Tbsp. fresh oregano
- 1 Tbsp. extra-virgin olive oil
- 1 tsp. salt
- 1/4 tsp. black pepper
Directions
- Place pork chops, onion and garlic in a large resealable plastic bag. Whisk remaining ingredients and pour over pork chops in bag, tossing to coat. Marinate 1 hour at room temperature.
- Heat grill or grill pan to medium. Remove pork chops from marinade. Grill 8 to 10 minutes per side, until internal temperature reaches 140 degrees on an instant-read thermometer. Let rest 5 minutes before serving; temperature will increase to 145 degrees.
