Low-Country Shrimp

Ingredients

  • 3 Tbsp. olive oil
  • 1 medium chopped onion
  • 3 ribs celery, sliced
  • 1 green bell pepper seeded, chopped
  • 3 cloves garlic, chopped
  • 1 can (14.5 oz.) stewed tomatoes
  • 1/2 cup water
  • 1 lb. large shrimp, peeled and deveined
  • pinch of cayenne
  • 4 cups brown rice and quinoa blend, cooked

Directions

  1. Heat olive oil in a large skillet over medium-high. Add onion celery, bell pepper and garlic. Cook 6 minutes, stirring occasionally. Stir in tomatoes and water, simmer, covered, 6 minutes. Add shrimp and cayenne, cook 3 minutes or until shrimp are cooked through. Sere with brown rice/quinoa blend.
