Ingredients
- 3 Tbsp. olive oil
- 1 medium chopped onion
- 3 ribs celery, sliced
- 1 green bell pepper seeded, chopped
- 3 cloves garlic, chopped
- 1 can (14.5 oz.) stewed tomatoes
- 1/2 cup water
- 1 lb. large shrimp, peeled and deveined
- pinch of cayenne
- 4 cups brown rice and quinoa blend, cooked
Directions
- Heat olive oil in a large skillet over medium-high. Add onion celery, bell pepper and garlic. Cook 6 minutes, stirring occasionally. Stir in tomatoes and water, simmer, covered, 6 minutes. Add shrimp and cayenne, cook 3 minutes or until shrimp are cooked through. Sere with brown rice/quinoa blend.
