Artic Char with Lemon Butter Sauce

Ingredients

  • 1 1/2 lb. yellow waxy potatoes (Yukon gold) cubed
  • 1/2 cup milk, warm
  • 2 Tbsp. butter
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper
  • 4 pieces (5 oz. each) Artic char
  • 1/4 tsp. salt
  • pinch black pepper
  • 4 lemon slices
  • 2 Tbsp. butter
  • 1 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1`Tbsp. capers
  • 1 Tbsp. parsley, chopped

Directions

  1. Place potatoes in a saucepan and cover with lightly salted water. Simmer 20 minutes, until tender. Drain and mash with warm milk, butter, 1/4 tsp. salt and 1/4 tsp. black pepper. Meanwhile, season Artic char with remaining salt and pepper and top each with a lemon slice. Broil 6 minutes. In a small saucepan, melt remaining butter and olive oil, lemon juice, capers and parsley. Drizzle sauce over fish and serve with potatoes and stemmed broccolini.
