Artic Char with Lemon Butter Sauce

Ingredients
- 1 1/2 lb. yellow waxy potatoes (Yukon gold) cubed
- 1/2 cup milk, warm
- 2 Tbsp. butter
- 3/4 tsp. salt
- 1/4 tsp. black pepper
- 4 pieces (5 oz. each) Artic char
- 1/4 tsp. salt
- pinch black pepper
- 4 lemon slices
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1`Tbsp. capers
- 1 Tbsp. parsley, chopped
Directions
- Place potatoes in a saucepan and cover with lightly salted water. Simmer 20 minutes, until tender. Drain and mash with warm milk, butter, 1/4 tsp. salt and 1/4 tsp. black pepper. Meanwhile, season Artic char with remaining salt and pepper and top each with a lemon slice. Broil 6 minutes. In a small saucepan, melt remaining butter and olive oil, lemon juice, capers and parsley. Drizzle sauce over fish and serve with potatoes and stemmed broccolini.
