Saigon-Style Green Vegetables

Ingredients

  • 2 Tbsp. canola oil
  • 1 leek, sliced
  • 4 scallions, sliced
  • 4 cloves garlic, sliced
  • 1 sweet red pepper, seeded, sliced
  • 1 lb. asparagus
  • 1/2 lb. thin green beans, cut into 1-inch pieces
  • 1/2 cup vegetable broth
  • 2 Tbsp. soy sauce
  • 3 Tbsp. lime juice
  • 1 tsp. sugar
  • 1/2 cup mint
  • 2 Tbsp. chopped peanuts
  • 12 oz. Asian-flavored baked tofu

Directions

  1. Heat canola oil in a large nonstick skillet over medium-high. Add leek, scallions, garlic, red pepper, asparagus and green beans. Stir fry 8 minutes. Partially cover halfway through cooking. Combine vegetable broth, soy sauce, lime juice and sugar, add to skillet and stir-fry 2 minutes. Stir in 1/2 cup mint and top with 2 Tbsp chopped peanuts. Meanwhile, broil tofu for 2 minutes ; cut into 1-inch pieces. Serve vegetables topped with tofu.
