Ingredients
- 1 small onion, diced
- 1 1/2 tsp. curry powder
- 1/2 tsp. ground cumin
- 1 1/3 cups dried red lentils
- 1 1.2 cup water
- 1/2 tsp. salt
- 1/3 cup Greek yogurt
- 2 Tbsp. tomato paste
- 2 Tbsp. chopped cilantro
- salt and pepper
- olive oil
- pita chips
Directions
- In a saucepan, cook onions in oil for 2 minutes. Stir in curry powder and cumin, cook 2 minutes. Add lentils, water and 1/2 tsp. salt. Bring to a boil, cover, reduce heat and simmer until tender, about 20 minutes.
- Puree with Greek yogurt and tomato paste. Stir in chopped cilantro; season with salt and pepper and drizzle with olive oil. Serve with pita chips.
