Red Lentil Dip

Ingredients

  • 1 small onion, diced
  • 1 1/2 tsp. curry powder
  • 1/2 tsp. ground cumin
  • 1 1/3 cups dried red lentils
  • 1 1.2 cup water
  • 1/2 tsp. salt
  • 1/3 cup Greek yogurt
  • 2 Tbsp. tomato paste
  • 2 Tbsp. chopped cilantro
  • salt and pepper
  • olive oil
  • pita chips

Directions

  1. In a saucepan, cook onions in oil for 2 minutes. Stir in curry powder and cumin, cook 2 minutes. Add lentils, water and 1/2 tsp. salt. Bring to a boil, cover, reduce heat and simmer until tender, about 20 minutes.
  2. Puree with Greek yogurt and tomato paste. Stir in chopped cilantro; season with salt and pepper and drizzle with olive oil. Serve with pita chips.
